Creamy Garlic Pasta

Not only is this meal absolutely divine!!... it can also be made in ONE POT!



One pot creamy garlic pasta:


I absolutely adore this recipe, normally I would always say I am such a tomato sauce kind of gal, especially as I find creamy sauces quite heavy, sickly or difficult to digest, but this creamy garlicky goodness is somehow elevated and more sophisticated whilst remaining insanely creamy and rustic. The taste is just phenomenal, it’s so rich and deep that all of it being made just from plants blows my mind. I hope you get to enjoy it as much as I do! The ultimate comfort food that doesn’t leave you feeling stuffed.


Yields 4 servings


Ingredients:


- 5 minced garlic cloves

- 2 finely chopped shallots

- 3 cups vegetable broth (you may need to add more as you go)

- 2 and ½ cups unsweetened non-dairy milk (I’ve used both almond and oat in the past)

- a bit of salt

- 500g dry fettucine (or linguine)

- Black pepper

- Dried oregano

- Chopped fresh basil or parsley for serving

Method:


1. In a large pan/frying pan/skillet (if you can get one big enough to fit your whole fettucine in that’s ideal, but I used the biggest one I had and then just snapped the fettucine in two), add some olive oil.

2. To the olive oil add your garlic and shallot with a little bit of salt. Cook on a medium heat until the garlic is soft and the shallot is translucent (but try and avoid caramelisation i.e. browning).

3. Then to you pot/pan add the vegetable stock and the non-dairy milk and stir these two in. Then add your pasta into the pot, trying to cover it with the liquid.

4. Start boiling it and then reducing the temperature so it gently simmers away for a bit. Stir a bit each time so that the pasta doesn’t all clump and stick together. Cook until your desired texture of pasta is achieved you may need to add more water or milk depending on how much liquid is evaporating.

5. Then finally add some seasoning of your choice and sprinkle on some herbs if you have any and nom away.

You can switch this dish up in many different ways, this time I added some spinach and some oven cooked and then pan fried sliced sausages, but you could also go plain, or add vegan chicken pieces, peas or broccoli.
